Pesto Sauce (V,GF)
On a recent Instagram poll I asked what you guys wanted to see more of on the blog and most of you asked for more recipes, so I am so excited to share some of my favorite recipes with you all! I have so many “go to” recipes but when I saw my beautiful basil plant flourishing I knew my next post had to be a pesto sauce. This recipe is vegan and gluten free with a vegetarian option, if you don’t mind dairy.
One thing I love about this recipe is that I usually have most or all of the ingredients already on hand. I also love that it’s healthy and tasty! It basically consist of olive oil, basil, garlic, lemon, pine nuts, and nutritional yeast. This time around I used cashews instead of pine nuts since that’s what I had on hand (it can also be made with walnuts if you don’t have pine nuts or cashews available). If your running a little low on basil but you have spinach on hand go ahead and throw that in to top off the 2 cups of basil you need (you will want at least one cup of basil).
Although I am not vegan, I do love incorporating vegan recipes whenever I can and this is a great recipe to do that with, but if you don’t mind the dairy than you can substitute the nutritional yeast for Parmesan cheese. I love how versatile this recipe is! As you can see there are many substitution options for different diet requirements or for that busy mom (or person) who can’t run to the store but has other ingredients on hand.
This sauce takes about 5 minutes to make, yet another plus! Just put all of the ingredients in a food processor or blender and blend to desired consistency. Is that easy or what?
I use this pesto for pastas, sandwiches, or even on crackers with cheese. I love to have it on hand for quick and easy meals. I wish I would have taken a picture of all of the meals and snacks I used this pasta for, but I did take a pic of one of the pastas I made. I’d love to know how you incorporate pesto into your meals! Pesto Sauce (V,GF)
Vegan and gluten free pesto sauce that's perfect for pastas, sandwiches and crackers.
- 1/2 cup extra virgin olive oil
- 2 cups fresh basil
- 2 cloves garlic
- 1 tbsp lemon juice
- 1 tbsp nutritional yeast (substitute parmesan cheese for non-vegan version)
- 1/2 cup pine nuts (can substitute cashews or walnuts)
- 1 pinch salt
Add all ingredients except olive oil to food processor or blender and blend. While blending slowly pour in olive oil.
Store in air tight container for up to a week in the fridge.
